Served hot, this pie is made using 'b�tch�ye' - cheese from fermented skimmed cow's milk, butter, eggs, chopped onions and parsley and 'djote' - a name given in Nivelles to the green beet vegetable. On the basis of very strict regulations, the 'Confr�r�ye d�l t�rte al djote de Nivelles' [Nivelles tarte al djote Fraternity] confers each year (in a public ceremony held in February) quality labels to the best producers, on a graded, ascending scale from one to four stars. This traditional pie has a long and proud past: it appears in the documents in 1218, but is probably much older.

This brewery with a long tradition produces, in addition to the Barb�r (a pale or brown ale sweetened with honey, which gives it its unique character, with 8% vol.) and the Bonne Esp�rance (a very fine abbey beer (i.e. high fermentation, refermented in the bottle, the traditional method typical of the finest beers produced in Belgium, likewise 8% vol), it also makes other famous beers such as the Floreffe (triple, double, pale and brown ale), Saison 1900, Newton (from apple), the Blanche de Brussels, Belgian Kriek, Belgian P�che and Belgian framboise.
